Prepare: Fold the paper filter to maintain its shape. Place it in Clever Dripper, rinse it with hot water, and filter out hot water.
Step 1: Place Clever Dripper on the serving vessel. Bloom the coffee by adding 40 grams of boiled water and let it bloom for 30 seconds.
(note: step1-3 use the Clever Dripper as a pour-over method)
Step 2: First pour with 80 grams of near-boiling water using a continuous circular motion.
(note: the step aims to extract aroma of the coffee)
Step 3: Bring water temperature in kettle down to 88C to 93C by adding some cold water. And start the second pour with 80 grams of water using a continuous circular motion.
(note: the step aims to extract sweetness of the coffee)
Step 4: Remove Clever Dripper from serving vessel to close the valve of Clever Dripper. Bring water temperature in kettle down to 80C to 85C by adding some cold water. Pour the last 40 grams of water into the center and steep for 20 seconds. Place Clever Dripper on to the serving vessel again and let it drain.
(note: the step use Clever Dripper as a steep-and-release method to extract aftertaste)
Step 5: Give it a little stir and enjoy.
